We need a special smoking stuff thread with tips for n00bs on what to do and recipes to follow. No dramas with much of this stuff, but the smoker i still find a little daunting and struggle with where to start to pick this stuff up.

Mostly but they are not all mine, I did a batch for a freind also.

That said, all of those are gone now and my catch from this years Troutfest goes into the brine in the next day or so after defrosting.

Picked up the cover for mine. Was slightly tempted by the vertical rotisserie but managed to resist.

Yeah I got one.

Haven't pulled it apart and assembled yet.

Need to start reading up on how to do this.

So are you best to go slow and low heat and can you regulate it ok with the ALDI job?
